Day 137 - Soft



I've always thought the texture and overall feel of eggplant is so interesting. They look like they would be hard, like a squash or cucumber. They remind me of the way a sting ray or dolphin feel under your fingers at a petting pool :)

  1. My mother would make lasagna layered with egglant slices in place of meat. The texture after baking was very complimentary to the pasta, and the eggplant soaked in the sauce flavor! Yummz.
